Francois Pralus became the first chocolatier to own a cacao farm when he discovered the island of Nosy Be off the coast of Madagascar. By acquiring this estate, he not only secured a supply of Criollo beans, the world's finest cacao variety, but also established control over the critical growing, fermentation and drying steps that are necessary to develop incredible flavors in the final chocolate. This bar is made from fine Criollo beans from Ambaja in the region of Sambriano. Well balanced with good fruit, floral and citrus notes with a hint of mint. A large bar at 100g (3.5oz). IMPORTED FROM FRANCE.
Ingredients: Cocoa, Pure cane sugar, pure cocoa butter, GMO–free for soy lecithin. May contain traces of nuts or milk.

Francois learned chocolate making from his father, Auguste, as well as a number of distinguished pastry schools. After managing a restaurant in Rio de Janeiro and working as a pastry chef in numerous restaurants throughout France, he has returned to run the family business: “Pâtisserie–Chocolaterie Pralus.” Eventually he got the idea to make his own bean to bar chocolate in France. He's travelled the world to find the best beans from the Caribbean, South America, Indonesia, and Africa and brought these beans back to create award-winning chocolate. Pralus has won numerous awards including the Gold Medal for best organic chocolate from the Academy of Chocolate, London.
