The small town of Chuao Venezuela has stood for centuries as a legend, making the world's finest cacao beans. Pralus applies his unique style to these beans, firing up a darker roast than most, but somehow magically leaving the berry fruit notes intact in the finish. Expect a complex bar opening with coffee, earth and brown sugar turning into blueberries and strawberries at the end. It's thought that the newer batches, such as this one, are showing even more berry than earlier experiments. Either way, our connoisseur friends in the chocolate world report that this is their favorite Pralus bar. A must try. Bean variety: Trinitario. 75% cacao.

We bring you the extraordinary chocolate of Francois Pralus, one of only 3 artisan chocolate makers in all of France. Pralus makes incredible single-origin bars and the Bio line of organic chocolate in the town of Roannes in the Rhone-Alpes region of France. Ronnes is known for it's artisan food and wine including the famous Beaujolais wine.

Francois learned chocolate making from his father, Auguste, as well as a number of distinguished pastry schools. After managing a restaurant in Rio de Janeiro and working as a pastry chef in numerous restaurants throughout France, he has returned to run the family business: “Pâtisserie–Chocolaterie Pralus.” Eventually he got the idea to make his own bean to bar chocolate in France. He's travelled the world to find the best beans from the Caribbean, South America, Indonesia, and Africa and brought these beans back to create award-winning chocolate. Pralus has won numerous awards including the Gold Medal for best organic chocolate from the Academy of Chocolate, London.
